How to make chocolate marshmallow
Step 1Mix the flour
You take a large bowl, put the sieve on top and put in it 60g powdered sugar, 30g cornstarch, 15g cocoa , sift the mixture to add smooth. Then use a spoon to mix well.
Step 2Boil gelatine mixture
You proceed to pour 30g of gelatine into a bowl, then add 120ml of hot water and stir well until the gelatine powder is completely dissolved in the water.
Then you put 240g sugar, 120ml water, 60ml corn syrup into the pot and cook on medium heat until boiling.
Continue stirring with a spoon until the mixture thickens to form bubbles. Scoop a few boiling bubbles into the cup if the balloon bursts in the water.
Lower the heat and continue to cook , then add the dissolved gelatine at first and stir with a spoon to dissolve the gelatine for about 1 minute , then turn off the heat.
Step 3Make chocolate marshmallow
Put the gelatin mixture in a bowl and sift into the bowl to add 30g cocoa.
Use a mixer to beat the eggs at medium speed for about 7-10 minutes , the mixture turns brown and thickens. Then add 15g vanilla and beat until the mixture is very smooth, can create a long strip.
Spread a layer of vegetable oil on the parchment lined in a rectangular glass container, then sprinkle about 2 tablespoons of the cocoa powder mixture all over the sides of the parchment, including the sides of the box.
Slowly pour the well-mixed gelatine mixture into the prepared glass container. Gently shake by hand to smooth the surface. You can add a few small chocolate chips to enhance the taste, if not, that’s okay.
Sift on the surface about 5g of powdered sugar and then put it in the refrigerator for about 6-8 hours.
Step 4Create finished products
After 8 hours, you take the chocolate marshmallow to go out.
You proceed to spread a layer of cocoa powder on the cutting board and then take the marshmallow out to the cutting board , use your hands to apply the cocoa powder evenly on all sides of the marshmallow part.
